Ingredients: 1 ½ pounds small red potatoes 1 teaspoon salt 4 tablespoons unsalted butter 2 large cloves garlic, minced 2 green onions (scallions) sliced thin, whites and greens parts separated Check below.
Instructions:
First. Place the potatoes and 1 teaspoon salt in a medium saucepan and cover with water by 1 inch. Bring to a boil then reduce the heat to medium-high. Continue cooking until the potatoes are tender, about 20 minutes. To test if the potatoes are done, slip a small paring knife into one of the larger potatoes. If it slips in and out easily, the potatoes are done. Drain the potatoes in a colander.
