Ingredients: 2 pounds meat or veggies of choice 1 small yellow onion, roughly diced ½ medium pineapple, cored, peeled & roughly diced (about 2 cups, see Recipe Notes!) 1 medium orange, zested & juiced (about ½ cup juice) 3 cloves garlic, smashed And so on.
Instructions:
Step one. Blend the al pastor marinade: Add all listed marinade ingredients, less the crushed red chili flake, to the bowl of a food processor. Blend to combine, pureeing the pineapple & onion. Once pureed, stir in the crushed red chili flakes. Use immediately, or transfer to a jar or airtight container and store in the refrigerator for up to 1 week.
And then, Marinate: Pour the marinade over your meat or veggies of choice. Marinate for at least 1 hour and at most 2 hours. See Recipe Notes.
